Happy Mother's Day

I've heard there is nothing harder but nothing better than being a mother. I would imagine this is so...children don't come with instructions and it's not like a job where you get to leave it when the work day is done. Being a mother is a life time of work...each life stage comes different responsibilities and changing roles. Well where am I going with this... well I felt the least I could do (not being a mother myself- I don't count Frankie as my child although she acts like one) I worked today at the hospital. I know if I was closer I'd be spending time with my family (it's still kinda of a bummer that I can't even after being in Florida for nearly 4 yrs!!). Instead of letting it get me down, I did one of my favorite things- cook. Yep another recipe photographed and available to add to your repertoire. This time I made eggplant Parmesan since Sweetbay had eggplants for a unbelievably low price. I also made bean burritos the other day for dinner. You will also see the roach I found in my bathroom. I hate to combine food and bugs together but I think the size of this thing will astonish you. Hope I didn't ruin your appetite too bad. Well Happy Mother's Day :)
