I had a bunch of spinach and ricotta left over from the lasagna I made for Parker's birthday party two weeks ago. With dairy being crazy expensive, I wasn't about to have it all go to waste. I've been putting ricotta on and in everything and everything...spaghetti pie, mini pizza English muffins, but the supply never seemed to dwindle. Now matter how much I used there was always still a lot more!! That's how I came to conclusion last week...why don't I make white pizza. I love making pizza...I've made regular, bruschetta, and now this which I have to say after tasting it, is one my best pizza creations. Everyone has a specialty dish and I think I've found mine. My bruschetta pizza seemed to be a big hit at our friend's Superbowl pizza... but anyway back to white pizza...
I got a great recipe off the Internet (why pay $20 for a cookbook where you'll use like 2 of the recipes). The ingredients consisted of pizza dough of course (I made mine from scratch), garlic cloves, olive oil, ricotta, frozen spinach, mozzarella cheese, and a dash of salt and pepper. As the pizza baked in the oven, the kitchen filled with the wonderful aroma of the mozzarella cheese, garlic, and herbs. In 10 minutes cooking time, I was enjoyed a fabulous and visually appealing dinner. As my grandma would say, "isn't this food beautiful?" See for yourselves.
